I do a few things outside my writer's chair. Really! 😉 I like to cook when I have the time, but when I'm busy, I have an ongoing love affair I fall back on. My crockpots. Yup- more than one.
It started when we lived out of town and my kids were young. I'd plan a trip in and do everything all in the same day. Groceries, library, hit the swimming pool for lessons or fun. We'd often be out of the house by 7 am because my kids were early risers, and then not home until mid afternoon. I knew I'd be totally dead tired, so I got in the habit of popping stuff into the crockpot and then supper would be ready without any further effort.
Now as a writer I will do the same thing. Get supper cooking before I sit down to write, and that way when I get lost in what I'm doing it's not ACK! 5 o'clock and what are we having!
Here's one recipe I got from my sister in law that we really enjoy.
Sweet Potato and Pear Soup
1T butter
1 small onion- chopped
1/4 C chopped carrots
1/4 C chopped celery
Saute until onions are soft
3 sweet potatoes-peeled and diced
2 pears- peeled and diced (canned are fine)
1/2 tsp dried thyme
add to above and saute for a minute
1 tsp paprika
5 C broth (chicken or veggie)
Add together. Cook until soft. Puree, then add:
1/3 C whipping cream
2 tsp maple syrup
2 tsp lime juice
salt and pepper to taste
Oh yeah, that’s me! I have two crockpots and have been known to employ the use of both in the same day. And I love making sure dinner is taken care of before I sit down to write… it’s a great feeling and allows me to relax into my work.
Did you know you can make baked potatoes in the crockpot? And rice? And oatmeal? And granola?
